Chicken Korma Recipe

Chicken Korma Recipe

 

Chicken Korma recipe is one of the delicious creamy yogurt based recipe. This recipe is prepared in Andhra style; it is usually served accompanied with pulao or rice. Recipe for chicken korma is prepared by adding cashew paste and other nutritional ingredients.

 

Ingredients:

 

Chicken Korma RecipeChicken – 1 kg.

Onions – 4 no.

Green chilli – 6

Coconut (fresh) – 1/4 piece

Yogurt/ curd – 1 cup

Salt – Required

Turmeric powder – 1 pinch

Red chilli powder – 3 tsp.

Coriander powder – 2 tsp.

Fennel – 1/2 tsp.

Poppy seeds – 2 tsp.

Cloves – 6 no.

Cinnamon – 6 no.

Cardamom – 4 no.

Cashew – 50 gms.

Coriander leaves – 2 tsp.

Oil – 150 gms.

Ginger garlic paste – 2 tsp.

Bay leaf – 1


Method:

 

  • Wash skinless chicken pieces thoroughly
  • Powder fresh coconut, poppy seeds and half cashew in a mixer grinder.
  • On other hand fry coriander seeds, fennel, 4 cloves, 4 cinnamon, 2 cardamom pieces and powder them.
  • Cut green chilly in long side and keep aside.
  • Grind 2 onions and keep aside.
  • Now cut the remaining onions into thin slices.
  • Add salt, turmeric powder, red chilli powder, onion paste, ginger garlic paste, yogurt, coconut cashew paste to chicken and let it marinate for 30 minutes.

 

Tip: Mix all the ingredients and cover with the lid or aluminium foil and refrigerate.

 

  • Heat oil in a pan and add onions and sliced green chilli pieces
  • Add marinated pieces and fry for a while.
  • As we have added yogurt and other pastes, water present in them is enough for cooking.
  • On other hand heat oil on a non-stick pan and add bay leaf, cloves, cardamom, cinnamon and fry for a while.
  • Using skillet remove chicken pieces leaving gravy part aside and fry in little oil separately until it turns its colour
  • Once it is done, add  the gravy and 1 cup water and cook further for a while and serve hot garnishing with coriander leaves
  • Chicken korma recipe tastes great with pulao, rice and Chapati.

Lemon Chicken

 

Lemon chicken is one of the delicious and easy to prepare non vegetarian recipe. Learn how to make recipes for lemon chicken in Indian style.

 

Ingredients:

Chicken breasts – 2

Egg – 1no.

Lemon juice – 2 tps.

Soya sauce – 2 drops.

Salt – Required

Corn flour – 25 gms.

Oil – 200 gms.

Sugar – 1 tsp.

Water – 200 ml.

Method:

 

  • Apply corn flour, egg, oil and salt to chicken breast and marinate for half an hour.
  • Heat oil in a vessel and fry the marinated until it is cooked inside
  • Cut into small pieces.
  • In another vessel boil water, add lemon juice, soya sauce, sugar and corn flour
  • Let it boil for two minutes until it thickens.
  • Put chicken pieces in a serving plate and pour the above gravy on top.
  • Garnish lemon chicken with lemon pieces and serve hot.

Chicken Balti

 

Chicken Balti is one of the delicious mughlai recipes. I have modified the ingredients to suit Indian flavour and tried to illustrate Chicken Balti Recipe in south Indian style.

 

Ingredients for Chicken Balti:

Chicken Balti

 

Chicken – 1 kg

Onions – 2

Tomato – 1/4 kg

Cinnamon (small size) – 4

Cloves – 4

Pepper – 4

Cumin seeds – 1/2 tsp.

Ginger garlic paste – 2 tsp.

Garam masala – 2 tsp.

Red chilli powder – 1 tsp.

Salt – Required

Lemon juice – 2 tsp.

Coriander leaves – 2 tsp.

Green chilli – 7

Oil – To fry


Method:

 

  • Wash and clean chicken with water and let it be cut in medium size.
  • Add ginger garlic paste, coriander leaves, pinch salt and turmeric powder. Mix well and let it marinate for half an hour.
  • Heat oil on a vessel and fry onion until golden colour.
  • Add cinnamon, cloves, pepper, cumin seeds, red chilli powder and salt. Mix well.
  • Cook tomatoes for a while and add chicken pieces.
  • Add curd and mix well. Close the vessel and cook for 10 minutes.
  • Once the pieces are cooked, add green chillies, garam masala, coriander leaves and mix.
  • Chicken balti is ready. Before removing from flame add lemon juice and off the flame.

Kebab Dilruba

Kebab Dilruba

 

Kebab dilruba is a delicious south Indian style recipe. Keema kebab recipe is made with grounded chicken flavoured with spices. It resembles like a cutlet but tastes great.

 

Ingredients:

 

Kebab DilrubaChicken keema (grounded) – 250 gms.

Onion (finely chopped) – 1 (medium size)

Tomato (sliced)- 1

Ginger and garlic (separately) – 1/2 tsp.

Fresh pepper powder – 1/2 tsp.

Garam masala – 1/2 tsp.

Coriander leaves – 1 tsp.

Oil – 1 tsp.


Method:

 

  • Mix all the ingredients of chicken keema kebab and marinate for at least 1 hour
  • Make it as a small balls and place it on a idli bowls and cook on vapour for about 10 minutes
  • Remove excess moisture with clean cloth or a tissue paper by pressing gently on the balls.
  • Now cook on a microwave grill or on a non-stick pan by applying little oil on the top.
  • If you are cooking on a non-stick pan, press gently with a wooden stick and fry until it turns golden brown.
  • Kebab Dilruba is ready. Serve hot as a snack.

Almond Chicken

Almond Chicken

 

Almond Chicken is prepared by adding almond paste and coconut powder as main ingredients. I tried to prepare Almond chicken recipe in Andhra style. This recipe tastes great with Chapati.

 

Ingredients:

 

Almond ChickenChicken – 1/2 kg.

Poppy seeds – 2 tsp.

Dry red chilli – 6 no.

Dry coconut – 1/4 piece

Badam – 20 pieces

Milk – 3 cups

Oil – 4 tsp.

Ginger juice – 4 tsp.

Salt – Required

Garam masala – 1 tsp.

Saffron colour – 1/2 tsp.


Method:

 

  • Wash chicken pieces with water and let the pieces be in big size.
  • Mix poppy seeds, dry coconut, badam and 6 table spoons milk and make a fine paste.
  • Heat oil on a vessel and add the above paste and cook for 2 minutes.
  • Add chicken pieces and cook for 8 minutes on a low flame.
  • Mix ginger juice, salt and milk and cook further.
  • Add saffron colour and masala powder in 2 tsp. milk and add to the above mixture.
  • Cook until oil oozes out and serve hot.
  • Chicken And Almond Recipe tastes great with tandoori roti

 

Tip: If you don’t like adding colour agent (saffron) then you can skip it.

Murg Musallam Recipe

Murg Musallam Recipe

 

Murg musallam recipe is one of the famous and delicious chicken breast recipes which is roasted with spices and prepared by adding saffron. Lean how to prepare Murgh musallam with our easy to prepare steps.


Ingredients:

 

Murg musallam recipeChicken – 1 large piece

Coriander seeds – 1 tsp.

Onion (sliced) – 1 no.

Aniseed – 1 tsp.

Dry red chillies – 4 no.

Cumin seeds – 1 tsp.

Black cardamoms – 2 no.

Gram dal (roasted) – 4 no.

Cloves- 4 no.

White cardamoms – 4 no.

Coconut – 2 inch piece

Saffaron – A pinch

Almond (Soaked in water for half an hour) – 1 no.

Yogurt/ curd – 1/2 kg.

Ghee – 6 tsp.

Salt – As per your taste

 

Method:

 

  • Soak saffron in a hot water (consider 1 tsp. of water)
  • Heat frying pan and roast remaining spices and grind together.
  • Coat chicken with ghee and roast on all sides on a saucepan until you get brown colour.
  • Remove and fry onions by adding remaining ghee until you get golden brown colour.
  • Add coconut and ground spices, fry further for 5 more minutes.
  • Now put back the meat into the pan.
  • On other hand blend curd by adding 1 1/2 liters of water by adding little salt.
  • Add this blended yogurt to the pan
  • Cover thetop with a lid and cook until liquid gets dried and make sure that the meat is still teder.

 

Tip: If you feel that the meat splits due to over cooking remove the lid so that water evaporates faster.

 

  • Murg musallam recipe is done. Just before you are about to remove from flame add safforon water garnished with chopped almonds.

Szechuan Chicken

Szechuan Chicken

 

Szechuan Chicken is a Chinese dish mixed with carrots and onions, tossed with a delicious sauce leaves you with an amazing experience. It is one of the easy chicken breast recipes which can be prepared with regular kitchen ingredients. A chicken recipe with carrots makes your meal filled with nutrition.


Ingredients:

 

Szechwan ChickenChicken (skinless and boneless) – 500 gms.

Salt – According to your taste

Sherry/ wine – 1 tsp.

Egg white – 1 no.

Corn flour – 1 tsp.

Pea nut oil – 2 cups

Carrot – 2 medium size (grated)

Onion – 1 no.

Ginger garlic paste – 2 tsp.

Chilli paste – 1 tsp.

 

For sauce:

 

Crushed red pepper – 1 tsp.

Brown ginger powder – ¼ tsp.

Sugar – 1 tsp.

Soya sauce – 3 tsps.

Chicken broth – ½ cup.

Vinegar – 1 tbsp.

Tomato sauce – 1/3 cup

 

Method:

 

  • Remove the skin and wash in water. Cut into small pieces about 1 ½ inch size and put in a bowl.
  • Add ¼ tsp. salt, of sherry/ wine, egg white, ginger garlic paste, chilli paste and mix well.
  • Add Corn flour and mix until it applied evenly, add oil and mix again.
  • Cover this mixture with a thin polythene cover or with a lid and leave it for about 30 minutes at room temperature (marinate)
  • In a separate bowl add chicken broth, pepper powder, soya sauce, sugar, brown ginger powder and mix well.
  • In a small bowl add corn flour and little cold water and make it diluted so that It can be used as a thickening agent
  • In a frying pan, add 2 cups of oil for cooking marinate.

 

Tip: Make sure oil is not too hot, if it’s too hot chicken turns hard. Also make sure it just turns its colour (white) and don’t wait until bubbles surround around the ingredients.

 

  • Remove the pieces from the oil and put them aside on a separate plate.
  • Remove excess oil and leave little oil for frying onion slices and carrot.
  • Fry onions until they turn its colour, return back the fried pieces and cook further for a minute
  • Add sauce ingredients, vinegar, and tomato sauce.
  • Cook further until it reaches boil state.
  • When the liquid is boiling, add corn flour mix and stir until the sauce thickens.
  • Szechwan Chicken is ready to serve, garnish with spring onions and serve hot.

 

Tip: For additional flavour you can add sesame seeds while cooking.
