  1. Use fresh and high-quality ingredients: Use fresh and high-quality milk and lemon juice or vinegar to make the chenna. The quality of the milk and the acidity of the lemon juice or vinegar can greatly affect the texture and taste of the rasgullas.
  2. Knead the chenna well: After making the chenna, knead it well to make it smooth and pliable. This helps to bind the chenna and ensure that the rasgullas are soft and spongy.
  3. Form the chenna balls: Form small, smooth and uniform-sized balls from the chenna. Make sure there are no cracks on the surface of the balls.

Ingredients

  • Milk – ½ litre
  • Refined flour maida – 2 tsp.
  • Lemon juice – 3 tbsp.
  • Sugar- 1 cup
  • Water- 1 cup
  • Rose essence or cardamom powder – 2-3 drops or 1/4 tsp

Instructions

How to Make Rasgulla Recipe:

  1. Heat milk in a pan and bring it to boil. Remove from heat.

Tip: Avoid using tetra pack milk as it is low in fat whereas whole milk best suits.

  1. Adding lemon juice, stir gently until white curd formed on the surface gets separated from the whey.
  2. On straining this milk, the yogurt like thing obtained is called “chenna”.
  3. Wash chenna well under cold running water and put this chenna in a cloth and press out the excess water by twisting the cloth
  4. Knead chenna to make a smooth dough. Add flour and knead again.
  5. Make small even size balls of the dough and keep aside.
  6. Prepare sugar syrup.
  7. Mix sugar and water in a saucepan and bring it to boil.
  8. Add chenna balls to the syrup and cook for 10-15 minutes covering with the perforated lid.
  9. Chenna dumplings will puff up.
  10. On cooling, add rose essence and refrigerate
  11. Rasgulla is ready to serve. Serve chilled.
