Ingredients

Ingredients for channa bhatura:

    For Channa:

    • Kabuli channa/ Chickpeas soaked overnight - 1 cup (large)
    • Tomato choped - 1 cup
    • Onions chopped- 2 cup
    • Coriander leaves chopped – 2 tbsp.
    • Ginger garlic paste - 1 tbsp.
    • Lemon juice extracted – 1 tbsp.
    • Oil – 4 tbsp.
    • Ghee – 1 tbsp. optional
    • Green chillies slit - 4 no.
    • Bay leaves – 2-3 no.
    • Sugar – 1/2 tbsp.
    • Cumin Seeds – 1/2 tbsp.
    • Mustard Seeds - 1/2 tbsp.
    • Red chilli powder – 1 tbsp. as per taste
    • Coriander powder – ½ tbsp.
    • Turmeric powder – A pinch
    • Garam masala powder – 1/2 tbsp.
    • Pepper powder– 1/4 tbsp.
    • Salt – As per your taste.

    For Bhatura:

    • Maida/ plain flour – 2 cups
    • Yogurt / curd – 1 cup.
    • Oil – For deep fry
    • Oil – 2 tbsp. for kneading dough
    • Soda Bicarbonate – ¼ tbsp. optional

      1. In a wide vessel, add maida, soda bicarbonate, yogurt, salt and required water to knead the dough.
      2. Make small balls of dough of equal size and cover with a wet cloth so that moisture is locked.
      3. As you start making bhatura recipe, take each ball of dough and roll with a roller.
      4. On another hand, heat oil in a kadai, once it reaches optimum heat put these puris into oil one by one.
      5. Let them get deep fried and expand like a ball, if needed pour little oil over puri.

      Method for the preparation of channa:

      1. Soak Channa for overnight or for at least 5 hours, clean and boil them till they turn soft, keep aside.
      2. Take few chana dal and mash them separately.
      3. Heat oil in a pan and add jeera and cumin seeds.
      4. Add sliced onions, green chillies, ginger garlic paste and saute for a while.
      5. Continue adding bay leaves, cinnamon stick, cloves, sliced tomatoes and mashed channa.
      6. Sprinkle red chilli powder, garam masala powder, turmeric powder, salt, coriander powder, pepper powder, boiled channa and required water.
      7. Mix all ingredients and cook for a while till you get a thick gravy.
      8. At last, add little sugar and few drops of lemon extract.
      9. Garnish Channa Bhatura Recipe with coriander leaves and serve hot.

      How to Make Bhatura Recipe:

      • Sieve maida/ plain flour, soda bicarbonate and salt together
      • Add yogurt and oil to knead. Make it into the soft dough.

      • In order to maintain moisture, cover the dough with a wet cloth.
      • Keep aside for about 5 hours.

       

      Tip: Take care that the cloth covered over the dough is wet and don’t let it dry.

      Tip: In other instance, we can make puri recipe within no time after the dough is kneaded. In this case, the dough should be kneaded for at least 5- 10 minutes.

       

      • Knead the dough once again before frying.
      • Make small balls and roll to make a thin layer with the help of some flour.

      • Heat the oil, once the oil is heat, fry until golden brown colour turning only once.

      Method for the preparation of channa:

       

      • Wash and soak Channa for about 5 hours.

      • Cook chickpeas adding enough water until cooked.
      • Take a little portion of peas and mash them to make gravy.

      Tip: Don’t throw away drained water, keep aside.

      • Chop onions and tomatoes, keep aside.
      • Heat oil in a large pan and add cumin seeds and jeera.
      • Once cumin seeds start spluttering add chopped onions.

      • Saute sliced tomatoes.

      • Once tomatoes are cooked add mashed chickpeas.

      • Now add turmeric powder, red chilly powder, salt and garam masala powder.

      Tip: Squeeze few drops of lemon if you feel its hot, lemon extract enhances flavor.
