If we are using country chicken we usually pluck hair and burn skin and then apply turmeric powder to disinfect it.

Cut chicken to small pieces so that meat absorb spices.

Put meat pieces in a large vessel and add salt, ginger garlic paste, turmeric powder, coriander powder, red chilli powder, black pepper powder, garam masala powder, oil and mint leaves.

Mix all ingredients and marinate for 30 minutes with lid covered at room temperature.

In a pan heat generous quantity of oil and fry onions, slit green chillies and curry leaves.

Once onions turn soft add marinated chicken and mix.

Lower the flame and close the lid. Cook for 15-20 minutes and stir occasionally.

Once the chicken is fried and turn a reddish colour, we can serve directly to have a soft bite.

If you like to roast well then wait for a few more seconds till they turn crisp.
