Boil potatoes, remove skin and mash them to soft.

Heat oil in a pan and add mustard seeds, curry leaves and green chilies.

Add onions and sauté till they turn translucent.

Sprinkle red chili powder, hing and salt.

Add ginger garlic paste, mix well.

Sprinkle garam masala powder, mango powder and turmeric powder.

Add potato mash and mix all ingredients and cook for a minute.

Add coriander leaves and mix well, remove from heat and keep aside.
