In a vessel, put potatoes and pour water till they are submerged.

Boil till they are cooked to soft, remove the skin and mash them.

Heat oil and add mustard seeds, curry leaves, and green chilies.

Add sliced onions, red chili powder, asafoetida, and salt.

Sprinkle garam masala powder, turmeric powder, mango powder and add ginger garlic paste.

Saute for a while, add mashed potatoes and cook for a while.

Mix coriander leaves and off the heat, keep aside.
