Spicy Egg Masala Recipe is one of the simple South Indian Style recipes with the blend of spices which goes well with plain rice, biryani or chapatti.

Ingredients
  • Eggs – 6 No.
  • Water – Required qty.
  • Salt – 2 ½ tbsp.
  • Oil – 7 tbsp.
  • Turmeric powder – ½ tbsp.
  • Red chilli powder – A pinch
  • Coriander powder – 1 ¼ tbsp.
  • Cinnamon sticks – 3 No.
  • Cloves – 4 No.
  • Green Cardamom - 2 Nos.
  • Bay leaf – 2 No.
  • Cumin seeds – ½ tbsp.
  • Onions – 1 bowl 3 large sizes, finely sliced
  • Green chillies – 2 tbsp.
  • Ginger garlic paste – 1 tbsp.
  • Curry leaves – 1 tbsp.
  • Tomatoes – ½ bowl 3 large sizes, finely sliced
  • Coriander leaves – 2 tbsp.
Instructions
  1. Boil eggs for 15 minutes by adding little salt so that they do not break.
  2. Once eggs are boiled, heat oil in a pan and add salt, turmeric powder, coriander powder and red chilli powder.
  3. Remove eggshells and pierce them so that it can absorb spices. Put them in the spice mix and roast for a while.
  4. Transfer to another bowl and little more oil and fry cloves, cinnamon sticks, bay leaves, green cardamoms and cumin seeds.
  5. Mix well and add sliced onions and green chillies, mix and add ginger garlic paste.
  6. Saute for a while and add curry leaves and tomatoes.
  7. Sprinkle salt, red chilli powder and turmeric powder. Cook further till tomatoes turn soft with lid covered.
  8. Add water and let it boil, put eggs and close the lid till you get a thick gravy.
  9. Sprinkle coriander powder to get thick gravy and add coriander leaves and mix well.
  10. Serve Egg Masala Recipe either with steamed rice or with chapati.
