Ingredients
  • Eggs – 6 No.
  • Cinnamon sticks – 3 No.
  • Cloves – 4 No.
  • Green cardamoms – 2 No.
  • Dry coconut – ½ cup
  • Groundnuts – 2 tbsp.
  • Cashew nuts – 3 tbsp.
  • Oil – 3 tbsp.
  • Turmeric powder – ¼ tbsp.
  • Salt – 1 tbsp.
  • Red chilli powder – 1 tbsp.
  • Onions – 1 cup 1 No. large size
  • Green chillies – 4 No.
  • Cumin seeds/ Jeera – ½ tbsp.
  • Curry leaves – 2 tbsp.
  • Ginger garlic paste – 1 tbsp.
  • Coriander powder – 1 tbsp.
  • Curd – 1 cup
  • Water – 1 glass 250 ml.
Instructions
  1. Spices make difference in this recipe adding a perfect blend of spices will make this recipe most flavored.
  2. In a pan, dry roast cinnamon sticks, dry coconut pieces, cloves, groundnuts, green cardamom and cashew.
  3. Once one feels the aroma of spices, transfer to another plate and let them cool.
  4. In a pan add 3 tbsp. oil to roast boiled eggs. To spice up eggs, sprinkle eggs, red chilli powder, turmeric powder and salt.
  5. Make an incision on eggs and roast them in oil for a minute and put them in another bowl.
  6. Onions play important role in making gravy. So put onions and green chillies in a mixer grinder to make a soft paste.
  7. In leftover oil in a pan, add cumin seeds and curry leaves.
  8. Add onion paste and ginger-garlic paste, sauté for a while and cook till its raw flavor is cooked.
  9. Now let’s prepare spice paste with roasted ingredients.
  10. Put all roasted spices in a mixer grinder and make a coarse powder. Add little water to make a soft paste.
  11. Add this paste to the onion mix and sprinkle a little salt, red chilli powder, turmeric powder, curd and coriander powder.
  12. Put little water and mix well. Put eggs and cook for 10 minutes covered with a lid.
  13. Once the gravy thickens, off the flame and serve Egg Kurma Recipe with biryani or chapatti.
