In a vessel, boil potatoes and mash them to a soft paste.

In a pan, heat oil, add mustard seeds, curry leaves and green chillies.

Once mustard seeds start spluttering, add onions, red chilli powder, hing, ginger garlic paste.

Sauté for a while till ginger garlic paste loses its raw flavor.

Add turmeric powder, garam masala powder and mango powder.

Mix all ingredients and add mashed potato.

Cook for 2-3 minutes then add coriander leaves and mix well. Keep aside.
