Boil eggs by adding adequate water and a little salt for 5 minutes.

On another side, clean basmati rice and soak for 20 minutes by adding 2 cups of water for each cup of rice.

While eggs and rice are being cooked let us prepare spices.

In a pan heat oil and add sayajeera, cardamoms, cinnamon sticks, bay leaf, cloves and star anise.

Add onions, green chillies and a little salt. Sauté for a while till onions turn translucent.

Put ginger garlic paste, sauté till the raw flavour is cooked.

Add cashew, mint leaves and coriander leaves and cook for a minute.

Sprinkle red chilli powder, coriander powder, turmeric powder, salt, garam masala powder, curd and mix well.

Add soaked rice along with water and cook for 10 minutes on low temperature with lid covered.

While rice is being cooked, let us prepare eggs, remove shells and pierce them with a knife.

In a pan, heat oil and put eggs, cook on low flame.

Sprinkle spice powders for extra flavour. Put turmeric powder, salt, garam masala and little coriander powder. Fry till outer layer turns golden brown.

At this point of time, we can either slice them into pieces or put them as it is.

By this time, the rice should have cooked 75 percent. Add eggs and cook till rice is cooked so that eggs absorb all the spices.
