Curry leaves - 1 tbsp.

How to Make Brinjal Gothsu Recipe:

Cut eggplant into small pieces and keep aside

Heat oil and add mustard seeds, once they start spluttering add curry leaves, chilies and onions

Saute till onions turn transparent.

Add tomatoes and eggplant, saute further for 5 minutes

Add tamarind paste, turmeric powder, salt and water.

Cook further on low flame so that eggplants turn soft.

Garnish with coriander leaves and serve hot.

Gotsu recipe goes well with plain rice and chapattis.
