In a mixing bowl, combine cleaned prawns with 14 tbsp turmeric powder and 14 tbsp salt. Combine thoroughly.

Heat the oil in a pan and add the prawns. Cook on high heat until the water is released and the vegetables are done.

Oil spills out after cooking. Turn off the heat and transfer to a new platter.

Add extra oil to the pan and add the grated onions, slit green chilies, and ginger garlic paste.

Stir in the curry leaves, cooked prawns, 14 tablespoon turmeric powder, and salt to taste.

Sprinkle with red chilli powder (adjust to taste, as we've already added green chilies).

To improve flavour, sprinkle garam masala, coriander, and jeera/cumin powder in little amounts (approximately 14 tbsp). Combine thoroughly.

Garnish the fried prawns with coriander leaves and serve immediately.
