Ingredients
  • Bitter gourd - 2 no. medium sized
  • Coconut grated - 1/2 cup
  • Red gram Toovar dal - 1/2 cup
  • Chickpeas - 3/4 cup
  • Black gram Urad dal - 2 tbsp.
  • Green Chillies - 3 no.
  • Tamarind paste - 1 1/2 tsp.
  • Coriander seeds - 1 1/2 tsp.
  • Dry red chilies - 3 no.
  • Jaggery - small marble sized
  • Peppercorn - 1/4 tbsp.
  • Turmeric powder - a pinch
  • Mustard seeds - a pinch
  • Curry leaves - 1 tsp.
  • Water - 2 cups
  • Tomato paste - 1 tbsp. Colouring agent, optional
  • Oil - to saute
  • Salt - as per your taste
Instructions
  1. Slice bitter gourd and keep them in salt water for five minutes (optional)
  2. By soaking in salt water, bitterness reduces
  3. Heat oil and saute bitter gourd and green chilies.
  4. Add turmeric powder, tamarind paste, salt and 2 cups of water.
  5. Cook on low flame until tender.
  6. While it’s cooking, heat oil in a separate pan and add urad dal, red chilies, coriander seeds, and peppercorns.
  7. Once they are roasted, add coconut grate and saute for a while.
  8. Grind above roast by adding tomato paste.
  9. Add this paste to bitter gourd.
  10. Add toovar dal and cook further for a while.
  11. Once done, take off from the flame.
  12. Heat few drops of oil and fry mustard seeds and curry leaves.
