Instructions
  1. Roast Dals: Heat 2 tbsp oil in a wide tawa on medium flame. Add chana dal and moong dal; fry for 1 minute until fragrant and lightly golden.

  2. Add Spices & Aromatics: Add green chillies, garlic cloves, cumin seeds, and coriander seeds. Stir and fry for 1 to 2 minutes until aromatic.

  3. Steam Greens: Add the cleaned coriander leaves into the tawa. Place a lid over the tawa and cook for 1 minute until the leaves begin to wilt.

  4. Season: Add salt, mix thoroughly, cover with the lid again, and cook for 2 minutes.

  5. Cook with Tamarind: Add the tamarind to the tawa and continue cooking uncovered on low flame until the coriander leaves are completely tender and soft.

  9. Garnish & Serve: Garnish with fresh coriander leaves. Serve warm with steamed rice and ghee or breakfast idli/dosa.

Recipe Notes
  • Lentil Care: Keep the flame on low to medium to roast the dals thoroughly without scorching.

  • Cooling Step: Do not blend while hot; cooling prevents motor pressure buildup and keeps the flavor balanced.
