ChickenFried Rice isone of the flavored rice recipes made with chicken and egg as the mainingredients. To add extra flavor we can even add a few veggies but in a small quantity.

Ingredients
  • Chicken – 250 gms.
  • Turmeric powder – ¼ tbsp.
  • Salt – 2 tbsp.
  • Red chilli powder – 1 tbsp.
  • Black pepper powder – ¼ tbsp.
  • Garam Masala powder – ¼ tbsp.
  • Rice flour – 1 tbsp.
  • Ginger garlic paste – ½ tbsp.
  • Oil to deep fry.
  • Eggs – 3 No.
  • Garlic – 1 tbsp. finely grated
  • Carrot slices – ¼ tbsp. thin slices
  • Fresh beans – ½ cup finely sliced
  • Garam Masala powder – ¼ tbsp.
  • Soya sauce – 1 tbsp.
  • Vinegar – 1 tbsp.
Instructions
  1. Clean and cut chicken pieces into small pieces and put them in a mixing bowl.
  2. Add a little salt, black pepper powder, turmeric powder, ginger garlic paste, red chilli powder, garam masala powder and rice flour.
  3. Mix well and close the lid and marinate for a minimum of 30 minutes.
  4. Meanwhile, prepare rice, if you have to cook, then start now or else add a little salt to day-old rice and keep aside.
  5. Add adequate oil to deep fry chicken pieces. Once they turn golden brown color, transfer and keep aside.
  6. Heat little oil in a kadai and put 3 eggs and scramble it. Sprinkle little salt and pepper powder and mix and keep aside.
  7. Add little oil add finely sliced garlic and vegetables. Cook for a while till are half done.
  8. Put chicken pieces and scrambled eggs. Cook for a second and put rice.
  9. Sprinkle spice powders as per taste ( ¾ tbsp. red chilli powder, a pinch of black pepper and salt as per taste as we have already added to rice, if not add 1 tbsp.)
  10. Add garam masala powder, vinegar and soya sauce and mix well at high flame.
  11. Tip: At this stage, we can add tasting salt to get a restaurant-style flavor.

  12. Sprinkle coriander leaves and serve Chicken Fried Rice hot with tomato sauce, few onions and a piece of lemon.
