Ingredients
  • 3 large overripe bananas peeled and mashed (approx. 300g–320g pulp)
  • 2 cups 250g all-purpose flour
  • 2 tbsp 15g cornstarch
  • 1 tsp 5g baking powder
  • ½ tsp 3g baking soda
  • ½ tsp 3g fine sea salt
  • ½ cup 115g unsalted butter, melted and cooled slightly
  • ½ cup 100g light brown sugar, packed
  • ½ cup 100g granulated white sugar
  • 2 large eggs room temperature
  • 1 tsp 5ml pure vanilla extract
  • ½ cup 60g raw walnuts, chopped (optional)
  • 1 tbsp 12g turbinado sugar, for topping (optional)
Instructions
  1. Preheat & Prepare: Heat oven to 425°F (218°C). Line a 12-well muffin tin with paper liners.
  2. Combine Dry Goods: In a medium bowl, whisk all-purpose flour, cornstarch, baking powder, baking soda, and salt until uniform; set aside.
  3. Mash Bananas: In a large bowl, mash overripe bananas with a fork into a pulpy texture with small fruit bits remaining.
  4. Whisk Wet Base: Whisk melted butter, brown sugar, white sugar, eggs, and vanilla extract into the mashed bananas for 60 seconds until glossy and emulsified.
  5. Fold Batter: Tip dry ingredients into the wet mixture. Use a silicone spatula to fold gently just until flour pockets disappear; fold in chopped walnuts if using. Do not overmix.
  6. Portion: Divide batter equally among the 12 muffin cups, filling each nearly to the top rim. Sprinkle tops with turbinado sugar.
  7. Two-Stage Bake: Bake at 425°F (218°C) for 5 minutes. Lower heat to 350°F (177°C) without opening the door; bake 15–17 minutes more until a toothpick inserted into the center comes out clean.
  8. Cool: Rest in pan for 5 minutes, then move muffins to a wire rack to cool completely.
