Ingredients
  • 500 g approx. 3 medium Potatoes (Yukon Gold, Russet, or Indian Pahadi Aloo)
  • 2 tbsp 30 ml Water (for par-steaming)
  • 2 tbsp 30 ml Neutral cooking oil or pure Ghee
  • 1.5 tbsp 9 g Whole cumin seeds (jeera)
  • ¼ tsp 1 g Asafoetida (hing)
  • 1 tbsp 10 g Fresh ginger, peeled and finely minced
  • 2 fresh Green chilies Serrano or Indian green, slit lengthwise
  • ½ tsp 1.5 g Ground turmeric (haldi)
  • 1 tsp 2.5 g Fine sea salt (adjust to taste)
  • ½ tsp 1.5 g Amchur (dry mango powder) (or 1 tbsp fresh lemon juice)
  • 2 tbsp 8 g Fresh cilantro leaves, finely chopped
Instructions
  1. Pierce the Spuds: Wash 500 g potatoes and prick each thoroughly with a fork 5 to 6 times.
  2. Steam in Microwave: Place potatoes in a deep microwave-safe bowl with 2 tbsp water. Cover with a microwave-safe plate and cook on HIGH (1000W) for 7 to 8 minutes until knife-tender.
  3. Cool & Cube: Uncover carefully, let rest for 3 minutes for surface moisture to evaporate, peel away skins, and cut into 1-inch cubes.
  4. Bloom the Spices: In a wide microwave-safe bowl, combine 2 tbsp oil, 1.5 tbsp cumin seeds, ¼ tsp asafoetida, 1 tbsp minced ginger, and 2 slit green chilies. Microwave uncovered on HIGH for 90 seconds until cumin turns golden brown and fragrant.
  5. Add Ground Spices: Stir ½ tsp turmeric powder into the hot oil mixture off-cycle.
  6. Coat & Roast: Add cubed potatoes, 1 tsp salt, and ½ tsp amchur. Fold gently with a spatula until evenly coated. Spread flat and microwave uncovered on HIGH for 2.5 to 3 minutes to roast edges.
  7. Garnish & Serve: Squeeze fresh lemon juice over the potatoes (if using), scatter 2 tbsp fresh cilantro, fold once, and serve warm.
