Sauté the Apples: Melt 14g butter in a skillet over medium heat. Add diced apples, 25g brown sugar, 1 tsp cinnamon, and 1 tsp lemon juice. Cook for 4–5 minutes until apples soften slightly and pan syrup clings to fruit. Spread on a plate to cool completely.
-
Prep Station: Heat oven to 350°F (175°C). Grease an 8-inch or 9-inch springform tin, line the bottom with parchment, and lightly flour the edges.
-
Whisk Dry Ingredients: In a bowl, thoroughly whisk all-purpose flour, baking powder, baking soda, salt, and 1/2 tsp ground cinnamon.
-
Cream Wet Base: In a large bowl, beat softened butter, granulated sugar, and brown sugar on medium-high speed for 3–4 minutes until pale and aerated. Beat in eggs one at a time, followed by vanilla and lemon zest.
-
Combine: With mixer on low, alternate adding dry flour blend in three additions with milk in two additions, mixing just until no white streaks remain.
-
Assemble: Fold two-thirds of cooled apples into the batter. Spread into pan. Top with remaining apples and turbinado sugar.
-
Bake: Bake at 350°F (175°C) for 42–48 minutes until golden amber, springy to touch, and an inserted skewer emerges clean (internal temp 200°F–205°F / 93°C–96°C). Cool 15 minutes in pan, release ring, and transfer to wire rack to cool fully.
