Ingredients
  • Rice flour – 2 cups
  • Jaggery – 1 cup
  • Water – required quantity
  • Salt – ¼ tbsp.
  • Sesame seeds – 1 tbsp.
  • Cardamom powder – ¼ tbsp.
  • Fresh butter – 2 tbsp.
  • Oil to deep fry
Instructions
  1. Use good quality jaggery for the best results. It’s a good idea to melt jaggery and filter to remove stones and dust from them.
  2. In a wide vessel add rice flour, sesame seeds, salt, fresh butter and cardamom powder.
  3. Mix all ingredients and add little jaggery syrup and mix. If needed add a little more syrup to get soft batter.
  4. Knead the dough for a minute so that dough becomes soft.
  5. Heat oil in a pan, put a small piece of dough to check the oil temperature.
  6. While oil is being heated, take a small portion of dough and press to make a round shape or cylindrical shape.
  7. The cylindrical shape is preferred as they can be fried well and evenly.
  8. Make the remaining dough into a similar shape and keep them in a wide vessel.
  9. Once the oil is ready, put them immediately before they lose their moisture.
  10. Deep fry them by stirring occasionally till they reach golden brown color on low flame.
  11. Strain oil using a colander and transfer to another bowl.
  12. Palakayalu or crispy rice flour snacks taste good when cooled. Store in a dry and air-tight container.
