While making this recipe we can use either previously cooked rice or instantly cooked rice.
-
As I am not left with any rice, I am cooking fresh rice.
-
Clean rice and put it in a rice cooker add water to it at ratio rice:water=1:2 (based on the age of rice).
-
Note: If rice is not older than 2 years then we need to decrease water or else rice grains may be sticky.
-
Once the rice is done, transfer it to another wide vessel and let it cool to get non-sticky grains.
-
Heat oil in a pan, add cumin seeds, mustard seeds, green chillies, curry leaves and mix well.
-
Add finely chopped onions and cook them on medium flame till they turn soft.
-
Put ginger garlic paste and stir till its raw flavour is cooked.
-
Add tomatoes, turmeric powder, and salt. Cook for 5 minutes with lid covered till tomatoes turn soft.
-
Sprinkle sambar powder and mix well.
-
Add rice and mix gently, add coriander leaves and mix well.
-
Garnish Tomato Rice Recipe with coriander leaves accompanied by yoghurt-based salad.
