This recipe is known to be originated in Italy where they use plain pasta and are served by adding cheese over it. Whereas Indians like to have recipes either spicy by adding a blend of masala spices or make any kind of recipe nutritional by adding vegetables

People who are in hurry to make this recipe as breakfast for their children can cook vegetables separately when pasta is being cooked. Add spices and make masala gravy in a pan and add pasta and vegetables along with the veg stock. The whole process of making this recipe can be done in 5-10 minutes.

Indian Style macaroni pasta is spicy and we add vegetables whereas American or other styles have cheese as they do not like to eat spicy foods. I have added cheese to the recipe as my children love to eat cheese.

Tips to make a perfect macaroni pasta recipe Indian style:

  • To make pasta non-sticky, off the flame once they are cooked and drain stock immediately.
  • We can add more water either boiling or add cold water and rinse pasta after it’s cooked to give a non-sticky texture.
  • Whatever the brand we use macaroni gets cooked within 5-10 minutes.
  • Do not overcook pasta as they turn soft and become sticky.
  • If you feel pasta is non-sticky after boiling do not rinse with cold water as it will drain all healthy starches.

Ingredients

  • Pasta- 2 bowls
  • Water – to boil
  • Salt – 1 ¼ tbsp.
  • Oil – 3 tbsp.
  • Garlic – 1 tbsp. finely chopped
  • Green chillies – 1 tbsp. finely chopped
  • Onions – 1 cup
  • Carrots – 1 cup
  • Beans – 1 cup
  • Tomatoes – 1 cup
  • Capsicum – 1 cup
  • Tomato ketchup – ½ cup
  • Kashmiri red chilli powder – 1 tbsp.
  • Coriander powder – ½ tbsp.
  • Garam masala powder – ½ tbsp.
  • Black pepper powder – ¼ tbsp.
  • Red chilli sauce – 1 tbsp.

Instructions

  1. Let’s start with cooking macaroni pasta for which let’s boil water and add little salt and oil. Once the water starts boiling add pasta.
  2. In about a minute or two pasta gets cooked, take one piece and check by pressing with fingers, if pasta turns soft then off the flame.
  3. Before it turns mushy, transfer pasta into a net ladder and drain the stock. If you want non-sticky we may even add little running water or cold water.
  4. In a pan add little oil and add finely sliced garlic, onions, green chillies and optional vegetables (carrots, beans and capsicum).
  5. Add tomatoes and mix all ingredients. Close the lid of the pan and cook for a minute or two on low flame so that vegetables turn soft.
  6. Put tomato sauce, red chilli sauceKashmiri red chilli powder, black pepper powder, coriander powder, garam masala powder and salt.
  7. Mix all ingredients and add pasta. Mix again till spice gravy gets coated well to veg macaroni pasta.
  8. Stir for a while till they become dry during this period we can grate cheese to give cheesy texture or just skip it.
  9. Serve macaroni pasta recipe Indian Style hot.

1.  Boil water in a vessel, when water starts boiling add macaroni, ¼ tbsp. salt and 1 tbsp. oil. Mix well.

2.  Cook for 10 minutes. Check pasta whether they are cooked or not. To check take a piece of pasta and press with fingers, if they are soft then they are ready.

3.  Transfer cooked pasta to a steel net ladder and drain water.

4.  Heat oil in a pan and add finely chopped garlic, green chillies and onions.
