Usually, this recipe is made in sweet shops along with sweet and hot. As this recipe is crisp they do not need chutney or sauce. If in case you need to have any chutney or sauce then based on your interest go with mint chutney or tomato ketchup.

Many pakoda recipes are deep-fried if you do not like to have oily food, and then put few drops of oil while mixing spinach, flour and herbs. Preheat your microwave and bake them at 180 degrees. But when it comes to pakora, deep-fried taste good.

In some places, people try to make pakoda using the whole leaf but in such cases, we need to use fresh leaves and make use of leaf like Mirchi Vada. In another case, they cut the leaves and make pakora by adding onions or cabbage along with leaves.

Tips to make perfect Palak Pakoda Recipe or Spinach Pakora:

  • Clean spinach with sufficient water as it is cultivated by spraying chemicals.
  • Let them dry under the fan so that they do not watery when mixing with flours.
  • We are adding green chillies and red chilli powder in small quantities, if you do not like to have a spicy version then lower their quantity.
  • If you like to have crispy pakora then avoid adding water as there is moisture in spinach when we clean them if not we get soft pakoda.
  • To get the crispy version we have added cornflour if you do not have it we can substitute it with rice flour.
  • While dropping the batter in the oil, check the temperature by putting a small portion. If needed lower the heat and wait for a while till it comes to normal temperature.
  • If you are looking for a soft and spongy texture then add little baking soda.
  • The temperature of oil plays an important role as when fried at low temperature it takes time to fry and absorb more oil. If it’s hot then they may get burnt.
  • As mentioned in the above point, if oil temperature drops then it takes time to fry so always fry in small batches.

Ingredients

  • Spinach/ Palak – 1 bowl
  • Oil – to deep fry
  • Onions – 1 bowl sliced into thin wafers
  • Salt – ½ tbsp.
  • Green chillies – 3 No.
  • Thymol seeds/ vaamu – ¼ tbsp.
  • Turmeric powder – a pinch
  • Red chilli powder – ½ tbsp.
  • Besan flour – 1 bowl
  • Rice flour/ cornflour – 2 tbsp.

Instructions

  1. As mixing of spices and ingredients takes less time, lets heat oil in the pan to deep fry pakodi.
  2. Take a mixing bowl and add onions, green chillies, thymol seeds, red chilli powder, turmeric powder, salt and spinach leaves.
  3. Mix all ingredients and add rice flour and besan flour.
  4. Palak Pakoda | Spinach Pakora demands a dry mixture so add besan flour in small batches and mix.
  5. By this time, oil might have reached optimum temperature, if it’s too hot then lower the flame and wait for a second to get the right temperature.
  6. To check oil temperature add a small lump of batter.
  7. Spread batter all over the pan and in batches and deep fry by flipping to another side.
  8. Deep fry on low to medium flame till they turn crisp and attain golden brown colour.
  9. Once fried, remove from oil and drain excess oil and transfer to a kitchen towel.
  10. Serve Palak Pakoda or Spinach Pakora as an evening snack directly or with chutney.

How to make Palak Pakoda or Spinach Pakora:

1.  Heat oil to deep fry in a pan before be prepare our recipe.

2.  In a mixing bowl add onions, spinach, salt and green chillies.

6.  When they turn their colour and turn crisp, remove and drain excess oil. Transfer them on to a paper towel.
