You might think potato pakoda will absorb a lot of oil and is not good for health. Then you are wrong, gram flour when coat well gets cooked and not allow oil to get absorbed. If you move towards the streets of Mumbai or visit Shirdi temple you will find many tiffin centers with this recipe.

In simple words, Bread Pakora recipe would be best during rainy seasons or with tea. Your children like to have a bite as it’s crunchy outside and soft and spicy inside. It’s a kind of pav bhaji but coated with gram flour and deep fried.

Ingredients

Ingredients (1 cup=200 ml.):

  • Bread Slices – 8 slices
  • Oil for deep fry

For stuffing Break Pakora Recipe:

  • Potatoes – 1/2 kg.
  • Oil - 3 tbsp.
  • Curry leaves - 1 tbsp.
  • Mustard seeds - 1/4 tbsp.
  • Green chilies - 4 nos.
  • Onion - 1 no. big
  • Hing - a pinch
  • Red Chili powder - 3/4 tbsp.
  • Salt - 1/2 tbsp. as per your taste
  • Garam masala powder - 1/4 tbsp.
  • Ginger Garlic paste - 1/4 tbsp.
  • Turmeric powder - 1/4 tbsp.
  • Mango powder/ Amchur - 1 tbsp.
  • Coriander leaves - 2 tbsp.

For bread pakora batter:

  • Besan/ gram flour – 1 cup
  • Salt - 1/2 tbsp. as per your taste
  • Thymol seeds - 1/2 tbsp.
  • Red chili powder – 1/4 tbsp.
  • Baking powder - 1/4 tbsp.
  • Hing - a pinch
  • Rice flour - 1/4 cup.
  • Water - needed

Instructions

Preparing Filling:

  1. In a vessel, boil potatoes and mash them to a soft paste.
  2. In a pan, heat oil, add mustard seeds, curry leaves and green chillies.
  3. Once mustard seeds start spluttering, add onions, red chilli powder, hing, ginger garlic paste.
  4. Sauté for a while till ginger garlic paste loses its raw flavor.
  5. Add turmeric powder, garam masala powder and mango powder.
  6. Mix all ingredients and add mashed potato.
  7. Cook for 2-3 minutes then add coriander leaves and mix well. Keep aside.

Preparing Batter:

  1. Sieve besan flour and add crushed thymol seeds, chilli powder, salt, baking powder, rice flour, hing and mix all ingredients.
  2. Add little water and make a thick and soft batter, if needed add required quantity of water.

Note: Maintain thick consistency or else our recipe consumes more oil.

  1. Whisk the batter well to get a soft and fluffy layer.

Filling:

  1. In a slice of bread, put potato stuff and spread over it and close it with another bread slice like a sandwich.
  2. Slice this bread into your required shape and keep aside.
  3. When you are about to deep fry, dip each slice of bread and coat batter properly.
  4. In a deep pan, heat oil and dip bread slices once oil reaches optimum heat.
  5. Deep fry those by flipping to another side till you get golden color.
  6. Serve Bread Pakora Recipe on a tissue paper, this recipe can be eaten directly or with tomato ketchup.

How to Make Bread Pakora Recipe:

 

Preparing Filling:

 

  • Boil potatoes and remove skin, when they are hot, mash them and keep aside.

Potato Stuffing (1)

 

  • Heat pan, add 3 tbsp. oil, curry leaves, mustard seeds and chopped green chilies.

  • Add chopped onions, hing, red chili powder and salt.

  • Continue adding garam masala powder, ginger garlic paste, turmeric powder and mango powder/ amchur.

  • Mix all the ingredients and saute for a while, add mashed potato and cook for a minute.

  • Once potato is cooked, add coriander leaves and off the heat.

  • Mix well and check salt and spiciness, if needed you can add a bit and adjust according to your taste.

 

Preparing Batter:

 

  • Sieve gram flour/ bean flour for any insects or dust.

  • Add this flour in a broad vessel and add salt, thymol seeds and red chili powder.

  • Continue adding baking powder, hing, rice flour and mix well till all ingredients are mixed.

Tip: Adding hing will keep the recipe to maintain light color and attain golden brown color while deep fry

  • Add water in the small amount and make a batter which is not thick nor thin.

Tip: Consistency of batter will make the recipe absorb less or more oil. If the consistency is thin oil absorbs more.

Tip: Taste the batter so that you can adjust your seasoning according to your taste.

Filling:

  • Take one slice of bread and spread potato mixture over it like a sandwich.

  • Take one more bread slice and put over first one and press gently so that it bonds with potato mash.

  • Cut bread slices diagonally so that they look like a triangle.

  • Dip this bread slices in batter and make sure that it’s coated well.

Note: Make sure that bread is not dipped for long in the batter so that it absorbs more batter. By doing so it breaks while deep fry.

  • Heat oil in a pan, once it’s hot deep fry Bread pakora recipe on both sides.

  • Once they turn golden brown remove and place them on tissue paper or in a separate bowl.
