Homemade Chicken Haleem Recipe is loaded with protein and nutrients as it’s made with wheat, pulses, chicken and a blend of spices. Based on our interest we can even add rice to it.

Usually, in almost all restaurants we find this recipe prepared for 10-12 hours. First, the chef cooks whole wheat and beats them with a large masher and then adds pulses and meat.

Most of the time chef spends mashing all ingredients manually so that even bones get cooked. At the end of the day, meat pieces are mashed in such a way that one can only get fiber of it.

  • Marinating chicken with spices will help in absorbing spices and give flavor to it.
  • Usually wheat takes time to cook so instead of adding whole grain it’s a good idea to use crushed grains.
  • Marinating chicken will help in cooking fast. Also, it makes meat soft.
  • While cooking dal, we can soak them and pressure cook or else roast them and cook without a lid.
  • Usually, avoiding pressure cook will enhance the flavor of the dal.
  • If you have a dal masher we can make use of it or else we can use a hand blender for both chicken and dal.

Ingredients

  • Chicken – ½ kg.
  • Salt – 5 tbsp.
  • Turmeric powder – ½ tbsp.
  • Red chilli powder – 1 ½ tbsp.
  • Garam Masala powder – 1 ½ tbsp.
  • Mint leaves – 2 cups
  • Coriander leaves – 2 cups
  • Curd – 1 cup
  • Wheat grains – 2 cups
  • Water – 6 glasses
  • Oil – ½ cup
  • Cinnamon sticks – 4 No.
  • Cloves – 11 No.
  • Green cardamoms – 4 No.
  • Star anise – 1 No.
  • Saijeera – ¼ tbsp.
  • Onions – 1 cup
  • Ginger garlic paste – 2 tbsp.
  • Urad dal – 3 tbsp.
  • Split moong dal – 3 tbsp.
  • Chana dal – 3 tbsp.
  • Yellow lentils – 3 tbsp.
  • Black pepper powder – 1 tbsp.
  • Ghee – 3 tbsp.
  • Cashew – ¼ cup

Instructions

  1. Clean and slice chicken pieces and put them in a mixing bowl.
  2. Add salt, turmeric powder, garam masala powder, red chilli powder, curd, coriander and mint leaves. Mix all ingredients and marinate for 1 hour.
  3. Clean and soak wheat grains for ½ hour by adding 2 glasses of water.
  4. Heat little oil in a pressure cooker and add cloves, green cardamoms, cinnamon sticks, star anise, saijeera, onions and ginger garlic paste.
  5. Saute for a while and add the marinated chicken. Cook for a while and add little water to pressure cook.
  6. At high temperature pressure cook for 6-8 whistle blows so that chicken turns soft.
  7. Dry roast yellow lentils, chana dal, urad dal and split moong dal till they turn crisp.
  8. In a pressure cooker, add soaked dal, dry roast lentils, 3 glass water, turmeric powder and oil.
  9. Cook for 30 minutes. Meanwhile, heat oil and deep fry onion slices to golden brown color. Drain excess oil and transfer to another bowl.
  10. Open the lid and transfer chicken stock to another bowl and mash chicken to the maximum.
  11. Similarly, mash dal if necessary and put chicken along with its stock in dal mix.
  12. Add mint leaves and coriander leaves and mix.
  13. Sprinkle garam masala powder, salt as per your taste, black pepper and mix well. Cook on low flame.
  14. Meanwhile roast cashews by adding little ghee till they turn their color to a golden brown.
  15. Garnish Hyderabadi Chicken Haleem Recipe with cashews along with ghee and fried onions. Serve hot.

How to make Hyderabadi Chicken Haleem Recipe:

1.  Clean chicken and add to large mixing bowl. Sprinkle 1 tbsp. salt, ¼ tbsp. turmeric powder and red chilli powder.

2.  Add 1 tbsp. garam Masala powder, 1 cup mint leaves, 1 cup coriander leaves and curd.

3.  Mix all ingredients and marinate for an hour with lid covered.

4.  In a mixing bowl, add wheat grains and clean them. Add 2 glasses of full water and soak for ½ hour.

5.  Add ½ cup oil to a pressure cooker and add cinnamon sticks, cloves and green cardamoms.

Put cinnamon sticks, cloves and green cardamoms.

6.  Put star anise, saijeera and 1 cup onions. Fry for a while.

7.  Add ginger garlic paste and sauté for a while till its raw flavor is cooked and make sure the bottom is not burnt.

8.  Put marinated chicken and add 1 glass full water and mix. Pressure cook chicken for 6-8 whistle blows on high flame.

9.  In a pan dry roast urad dal, split moong dal, chana dal and yellow lentils.

10.  Roast dals till they turn crisp and emit aroma. Once they turn color transfer to another plate.

11.  Add soaked wheat along with its stock, dal and 3 glass full water.

12.  Put ¼ tbsp. turmeric powder and 1 tbsp. oil and cook for 30 minutes without a lid.

13.  Heat oil in a pan and deep fry them till they turn golden brown and crisp.

14.  Using two spatulas squeeze excess oil and transfer to another plate.

15.  Open the lid of the pressure cooker and transfer chicken stock to another bowl and crush chicken to soft fiber.

Mash chicken by separating stock.

16.  Check dal, if you feel 80% of dal is cooked, add chicken along with its stock and mash for a while.

Add chicken and its stock. Add onions.

17.  Add 2 tbsp. salt, black pepper, mint leaves and coriander leaves and mix well.

18.  Sprinkle ½ tbsp. garam Masala powder to give spice punch and mix well.

19.  Add ghee in a pan and roast cashews for a while till they turn a golden brown color.

20. Add fried cashews along with ghee. If needed add 3-4 tbsp. ghee for additional flavour.

21.  Put fried onions over Hyderabadi Chicken Haleem Recipe and off the flame.
