Coconut Rice Recipe or Thengai Sadam is one of the South Indian recipes made with finely grated coconut, rice and a blend of spices. This is one of the simple nutrition-rich recipes which can be made with fewer ingredients in less time.

In South India, people make Kobbari Annam during Devi Navratri festivals as naivedyam apart from this recipe, people also offer Lemon rice, sweet Pongal. and Khara Pongal recipes.

Sometimes you may think of making this recipe with frozen coconut grate but fresh but not tender coconut tastes great. Spices like curry leaves and ginger enrich this recipe with aroma.

Thengai Sadam can be used directly or can be packed for breakfast. We may eat it directly or accompany Navratan korma if you like to have spicy.

Ingredients

  • ½ Large bowl Coconut Grate – ½ Large bowl
  • 1 bowl Rice
  • 500 ml. Water
  • 2 tbsp. Ghee
  • ½ tbsp. Mustard seeds
  • ½ tbsp. Cumin seeds
  • 1 tbsp. Chana dal
  • 1 tbsp. Ginger pieces
  • 6 No. Green chillies
  • 3 No. Dry Red chillies
  • 2 tbsp. Curry leaves
  • 2 tbsp. Cashew
  • 1 tbsp. Salt
  • 2 tbsp. Coriander leaves

Instructions

  1. Clean rice and add adequate water based on the oldness of rice and cook.
  2. Usually, the ratio of rice and water is 1:2 when you are preparing in small quantity.
  3. If you already have cooked rice then it's well and good, as this rice absorbs the flavour of spices rather than freshly cooked rice.
  4. In a pan, heat ghee and add chana dal, ginger pieces, mustard seeds, green chillies, cumin seeds, curry leaves and dry red chillies.
  5. Saute for a while and add cashew.
  6. Add finely grated fresh coconut and sauté for a while.
  7. Sprinkle salt and mix for a second.
  8. Add cooked rice and stir till all ingredients are mixed.
  9. Serve Coconut Rice Recipe or Thengai Sadam garnished with coriander leaves.

How to make Coconut Rice Recipe:

  • First let us cook rice, add rice in a vessel and pour little water to clean rice.

  • For one bowl of rice, add 2 bowls of water and cook on low heat.

Coconut Rice Recipe: Cooking Rice

Tip: Once the rice is cooked, we can find the dried outer layer. To check whether rice is cooked or not, place a spoon in the middle of the rice, if we find non-sticky then rice is cooked else cook till its non-sticky.

  • Heat 2 tbsp. ghee in a pan and add mustard seeds, cumin seeds and chana dal.

  • Add finely sliced ginger pieces, green chillies, dry red chillies and curry leaves.

  • Drop cashew and coconut grate and sauté for a while.
