Liver masala recipe is one of the famous recipes in the non-veg section. It is quite a popular dish in many restaurants and dhabas. I have found few people making slices of liver but I feel that not a good idea as this is soft it may spread while cooking. Also, we need to take care while sauting, it should be done with gentle care.

Few people like to slice onions long and saute them and others like to go the traditional way of slicing thin. We cannot point any of them as they give the same flavor.

  1. Choose fresh liver: When selecting liver for the dish, it is essential to ensure that it is fresh and of good quality. Fresh liver is firm and has a reddish-brown color. Avoid any liver that has a foul smell or appears discolored.
  2. Clean and cut the liver: Clean the liver thoroughly by rinsing it in cold water and removing any fat, veins or membranes. Cut the liver into bite-sized pieces and pat them dry with a paper towel.
  3. Toast and grind the spices: Toasting whole spices and then grinding them can enhance their flavors. Use a spice grinder or a mortar and pestle to grind the spices to a fine powder.
  4. Add onions and tomatoes: Fry sliced onions and tomatoes until they are caramelized and soft. This adds a rich and sweet flavor to the dish.
  5. Add the spices: Add the ground spices, such as cumin, coriander, turmeric, red chili powder, and garam masala, to the onion and tomato mixture. Cook the spices for a few minutes until the raw smell disappears.
  6. Cook the liver: Add the liver pieces to the spice mixture and stir to coat them well. Cook the liver on high heat for a few minutes until it is browned on the outside but still moist and tender on the inside. Overcooking the liver can make it tough and chewy.

Ingredients

Ingredients for Liver Masala Recipe:

  • Liver – 250 grams you can choose chicken or mutton variant
  • Ginger-garlic paste – 1 ¼ tbsp.
  • Red Chilli powder – 1 tbsp.
  • Turmeric powder – 1/2 tbsp.
  • Garam masala powder – 1/4 tbsp.
  • Cumin seed jeera- 1/4 tbsp.
  • Mustard seeds – 1/4 tbsp.
  • Onions big – 2 nos.
  • Oil – 3 tbsp.
  • Salt – 1/2 tbsp. as per your taste
  • Cloves- 4-5 nos.
  • Green cardamom – 2 no.
  • Daalchini cinnamon stick – 2-inch thin strip
  • Green chillies – 3 nos.
  • Lemon – 1 no. optional

Instructions

How to Make Liver Masala Recipe:

  1. Clean liver and put in a bowl, add ginger garlic paste, turmeric powder, chilli powder, garam masala powder, salt and 1 tbsp. oil.
  2. Mix all ingredients so that spices get coated to pieces, keep aside for 30 minutes.
  3. In a saucepan, heat oil and add mustard seeds, cumin seeds, cloves, green cardamom and cinnamon stick.
  4. Saute all ingredients for a while and add sliced onions and green chillies.
  5. Let onions fry on low heat till they turn a golden brown color.
  6. Add ginger garlic paste and liver pieces cook for 5-10 minutes so that the liver is cooked well.
  7. Garnish Liver Masala Recipe with coriander leaves and sliced lemon pieces.

How to Make Liver Masala Recipe:

  • Wash and remove the thin layer above the liver.
  • Add turmeric powder, chilly powder, salt and ginger garlic paste.

  • Add little garam masala powder.

  • Add 1 tbsp. oil and mix well.

  • Let the above mixture marinate for around 30 minutes.
  • Heat oil on a nonstick vessel and put mustard seeds, jeera and green cardamom, cloves and cinnamon sticks.

  • When you notice mustard seeds spluttering, add sliced onions.

  • Once onions turn translucent, add green chillies and saute for 2 minutes on low heat.

  • Add marinated liver. Let it cook further for about 5 minutes.

Tip: If you feel this recipe is a bit spicy you can add a few drops of lemon juice to lower its spiciness.
