How to makeJackfruit seed curry:

1.  Clean seeds and put them in a pressure cooker, add ¼ tbsp. turmeric powder and 1 tbsp. salt.

Ingredients

  • Jackfruit seeds – 250 gms.
  • Turmeric powder – ¾ tbsp.
  • Salt – 2 tbsp.
  • Oil – 3-5 tbsp.
  • Cumin seeds – 1 tbsp.
  • Onions – ½ bowl
  • Green chilies – 4 No.
  • Fresh ginger garlic paste – 1 tbsp.
  • Curry leaves – 2 tbsp.
  • Tomatoes – 2 No.
  • Red chili powder – 1 tbsp.
  • Coriander powder – 1 tbsp.

Instructions

  1. Clean the seeds and place them in a pressure cooker with ¼ tablespoon turmeric powder and 1 tablespoon salt.
  2. In a kadai, heat the oil and add the cumin seeds, onions, and green chillies.
  3. Stir in the curry leaves and freshly ground ginger garlic paste. Cut tomatoes into bits and make them puree, then add tomato puree and stir.
  4. Combine the turmeric powder, salt, red chilli powder, and coriander powder.
  5. By this point (2 whistles), the jackfruit seeds are cooked. When they are checked, they can be squashed with finger pressure.
  6. Drain the cooked water from the seeds and cut them in half.
  7. Pour 1 glass of water over the jackfruit seeds and mix. Cook for 5 minutes more with the lid closed to allow the spices to soak.
  8. Remove the lid and sprinkle with garam masala powder before serving the jackfruit seed curry hot with steamed rice or chapati.
