In another variant, we can add besan flour along with rice flour in small quantities but the pure rice flour recipe is crisp in texture. I have added fresh butter to our recipe to get a mild soft and hollow texture. Murukulu recipe is one of the soft and crispy evening snacks which Telugu-speaking people love to eat as tea time snacks.

Many of us get the hard texture and sometimes they even do not get hollow inside, this is because we do not add an adequate amount of butter or oil while preparing the dough. Not just oil or butter even kneading dough also makes a change.

Once kneading is done, we need to put a wet cloth over the dough when we are making it in large quantities so as to keep the dough soft, if not murukku may break. My suggestion to get perfect murukku is to use fresh and soft rice flour.

Tips to make perfect Rice Flour Murukku Recipe:

  • Adding red chili powder will make this recipe look mild reddish, if you want whitish we can add green chili paste.
  • If you do not have fresh butter, we can even add salted/ unsalted butter.
  • While mixing flour it’s a good idea to use a spoon as butter/ hot water might burn your hands.
  • To check whether the oil is ready or not put a small piece of dough, if it rises immediately then the oil is ready, or else let it reach optimum temperature.
  • Store in an airtight container only when they cool down or else they may lose their crispiness.
  • If you are not comfortable pressing directly into oil then take a plate and grease it with a little hot oil and press on it. Later transfer to oil once you have the required murukulu shape and size.

Ingredients

  • Rice flour – 1 ½ bowl
  • Salt – 1 tbsp.
  • Red chili powder – 1 tbsp.
  • Sesame seeds – 2-3 tbsp.
  • Fresh butter – 2 tbsp.
  • Carrom seeds/ ajwan – ½ tbsp.
  • Water – required to knead
  • Oil to deep fry.

Instructions

  1. Add rice flour in a wide bowl and add salt as per taste, red chilli powder (we can substitute with green chilli paste), sesame seeds, carom seeds and fresh butter.
  2. Mix all ingredients, if butter is in a solid state let it remain at room temperature for a while.
  3. Add water in small portions and knead the dough for 5 minutes till its texture turn soft. Keep aside.
  4. Heat oil in a pan at medium to high flame. On another side grease the murukku moulds with oil and make a small lump of batter and put it in the mould.
  5. Once the oil is ready, put a small lump of batter to check the oil temperature. If it raises immediately then the oil is ready.
  6. Press rice flour murukku directly in oil or on a plate and slide it into the oil.
  7. Deep fry for a minute and then flip to another side. As we are making with rice flour, it turns crisp easily so it’s enough if the colour changes to a mild golden brown.
  8. Store Andhra-style rice flour murukku recipes in an airtight container only once they are cooled.

How to make Rice Flour Murukku Recipe:

1.  Add rice flour in a mixing bowl and sprinkle salt, red chili powder and sesame seeds.

2.  Melt fresh butter and when it melts put it over the flour.

3.  Mix all ingredients and crush carrom seeds in your hand and put over the mix.

4.  Add lukewarm water in the same bowl and pour over the flour and knead well till it turns out soft and pliable.

5.  Grease the murukku mold and then fill the batter into the mold. Press directly in oil and flip to another side after a minute.
