Boondi Laddu is very famous during the festive season of Lord Ganesh. It is considered boondi ladoo is one of the famous Vinayaka Chavithi recipes. 

This recipe is one of the traditional recipes where gram flour batter is made into a thick fluid and poured directly over hot oil using a perforated spatula. As batter coming out of spatula are round you will get small bead type boondi.

Always remember it’s not how you make boondi in order to get perfect Boondi Laddu we need to make perfect consistency sugar syrup or else you will end up making sweet boondi recipe.

Tips to help you make the perfect boondi laddu:

  1. Use the right consistency of batter: The batter should be of a pouring consistency, not too thick or too thin. A smooth batter will result in smooth boondi droplets.
  2. Use the right temperature of oil: The oil should be hot enough but not too hot, around 160-170°C, to get perfect boondi droplets. If the oil is too hot, the boondi will get burnt or if it’s not hot enough, the boondi droplets will disintegrate.
  3. Use a ladle with holes: Use a ladle with small holes to make the boondi droplets. Gently pour the batter over the ladle and tap it gently to release small droplets of the batter into the hot oil.
  4. Soak the boondi in sugar syrup: Soak the boondi droplets in hot sugar syrup for about 10-15 minutes until they are soft and absorb the syrup.
  5. Shape the laddus when the mixture is still warm: The boondi laddu mixture should be shaped into small balls when it is still warm and pliable. Once it cools down, it will become hard and difficult to shape.
  6. Add cardamom powder: Add a pinch of cardamom powder to the laddus to enhance their flavor.
  7. Decorate with nuts: You can decorate the laddus with chopped nuts like almonds, pistachios, or cashews to make them more attractive.

Ingredients

  • Gram flour – 1 cup
  • Cardamom powder – 1 pinch
  • Saffron – 1 pinch
  • Rice flour – 1 tbsp
  • Melon seeds – 1 tbsp
  • Baking Powder -1 pinch
  • Cashew nut half broken – 1 tbsp
  • Raisins – 1 tsp
  • 1 cup Water
  • Sugar – 2 cups
  • Ghee – 2 tsp
  • Oil for deep fry

Instructions

How to Make Boondi Laddu Recipe:

  1. Mix the Gram flour, baking powder, rice flour
  2. Batter the above-mixed flours until it turns smooth and thick.
  3. Heat the oil for deep fry of the batter (let the batter is smooth so that it can enter through sieve freely).
  4. Pour the batter over a round holed sieve by tapping gently with a spoon
  5. Let the small balls of dough are deep fried and keep aside.

Note: While deep fry make sure that the batter or round balls don’t become crispy they should remain soft

  1. On another hand, take a deep bottomed vessel to make sugar syrup by adding water and sugar.
  2. Stir the mixture continuously until the syrup reaches ½ thread consistency.
  3. Take a small vessel and put cashew nuts, melon seeds, raisins and fry them.
  4. Mix melon seeds, cashew nuts, raisins, saffron, cardamom powder to the fried boondies
  5. Make it into round balls

Note: Make the balls when the mixture is warm or else sugar crystallizes and balls cannot be formed.

  1. When Boondi Laddoo gets cooled, they are ready to be served.
  2. You can even refrigerate it for storing for a long time (put it in an airtight container)
