People love to eat this recipe because of its spicy and crunchy flavour. As this is a deep-fried recipe, we need to take care while draining oil, if needed put kitchen towel.

I have observed people slicing into large chunks and dried for some time and then coat with chickpea flour. Instead of deep-frying, they tend to bake them but one can experience the real flavour of this recipe only when deep-fried.

Tips to make perfect Bendi 65 Recipe | Crispy Bendi Fry:

  • Check image or video the way we need to slice bendi so that we can get a crispy flavour.
  • Try to purchase tender veggies to remove fibre kind of experience when chewed.
  • Adding little water before adding spices will help in evenly mixing of spices.
  • To know the tenderness of this veggie, break the tip with a finger. If it breaks then they are tender, if not they are not tender.
  • While mixing sliced pieces with spices and flour, do not mix all flour at a time as this need to be dry with flour coating.
  • When making in large quantity, coat bendi with spices and mix flour in small batches so that we mix flour to that quantity that is deep-fried as bendi releases water or moisture.
  • To get a crunchy flavour, we add groundnuts.
  • People who love to eat more spicy or like to add flavour to this fry, sprinkle spice powders while they are hot.
  • Once you remove from oil, keep aside to cool. Once cooled, they turn crisp.

Ingredients

  • Bendi/ okra/ lady’s finger – 250 gms.
  • Water – required quantity
  • Turmeric powder – ¼ tbsp.
  • Salt – 1 tbsp.
  • Coriander powder – ½ tbsp.
  • Jeera/ cumin powder – a pinch
  • Garam masala powder – ½ tbsp.
  • Ginger garlic paste – ¼ tbsp.
  • Red chilli powder – ½ tbsp.
  • Food colour red – a pinch
  • Garlic cloves – 2 tbsp. crushed
  • Curry leaves – 2 tbsp.
  • Groundnuts – ½ cup
  • Green chillies – 3-4 No. based on the spiciness you need
  • Besan flour – 1 tbsp.
  • Rice flour – 1 tbsp.
  • Corn flour – 1 tbsp.

Instructions

  1. Clean and cut okra into thin pieces, cut diagonally so that we can get thin and large size pieces.
  2. To mix spices evenly, In a bowl add very little water to mix all spices.
  3. Add salt, coriander powder, turmeric powder, garam masala powder, jeera powder, red chilli powder and ginger garlic paste.
  4. People who are health conscious can avoid food colour or else you may add a pinch of food colour (red).
  5. Add bendakaya and mix well till the spices are coated well. Add ground nuts, green chillies and curry leave.
  6. Coat this mix with flours which give flavour (besan flour) and others give crispiness (corn flour).
  7. If you are making in small quantity then mix all flour making bendi coat dry.
  8. Heat oil in a pan and deep fry above mix on low flame till they turn crisp.
  9. Bendi 65 recipe turns crisp when they are cooled. Serve them as a side dish along with rice dishes.

How to make Bendi 65 Recipe:

1.  Slice lady’s finger thin and diagonally and keep aside.

5.  Add sliced okra and mix well till spice liquid is well coated.

6.  Put a few strands of curry leaves and groundnuts to give crunchy flavour.

8.  Put a small piece of mix and check oil temperature when oil is ready, put bendi 65 and deep fry.

When oil is ready deep fry.

9.  Deep fry on low to medium flame till they turn golden brown and crisp.

when Crispy Bendi Fry Recipe is done, remove from oil.

10.  Serve Bendi 65 Recipe once cooled as they give crunchy flavour once cooled.
