If you are a potato lover then your will love to eat this wonderful snack recipe. Homemade French fries are easy to make, all you need to take care of is choose the right potato for making this recipe. This snack tastes good when accompanied by tomato ketchup or mayonnaise.

We all know that potato has starch and based on the amount of starch potato variant changes, the less starch variant best fits our recipe. To my knowledge russet and Idaho variants best suit our recipe.

The biggest challenge of making the perfect French fries recipe is to keep it crunchy even after it reaches the table. Most of the time they tend to remain crisp for a few minutes and then turn soft within minutes. Follow the below tips to get rid of this issue.

Tips to make perfect French fries recipe:

  • Always use low starch variant potatoes, they are large in shape, white, dry and meaty inside.
  • Few people like to have skin, if you want to keep its skin then clean it properly.
  • Always use a Steel knife, if possible try to use a serrated knife to slice potatoes.
  • There are two processes to remove starch, one is to rinse it in water without soaking them and another is to soak them in the refrigerator.
  • Try to cut length-wise with a thin size (1 cm width) as it becomes easy to deep fry.
  • To get a perfectly thin and long shape always use large-size potatoes.
  • Discard edges while cutting potatoes, It becomes easy to cut thin layers.
  • If you are using a manual machine to cut then discard the bottom so that we get a grip.
  • It’s a good idea to cut raw potatoes into thin slices so that we can remove excess starch from them.
  • Putting sliced pieces in salt water will lock the colour.
  • While deep frying, do not fry to the golden brown colour in a single instance. They remain soft although they are fried to a golden brown. It’s a good idea to fry in two instances.

Ingredients

  • Potatoes – 1 kg.
  • Salt – 1 tbsp.
  • Corn flour – 3-4 tbsp.
  • Water to boil.
  • Oil to deep fry.

Instructions

  1. We may use without discarding skin, if you wish you may peel the skin of the potatoes.
  2. In a vessel, put little salt and water and keep aside.
  3. Cut potatoes into thin vertical slices and then into thin and long pieces to form 1 cm. width. While cutting if you want to get a perfect rectangle shape, we may discard the top and bottom sides.
  4. To make cutting easy, either use a chef knife or a serrated knife. Put these pieces in salt water to lock their colour.
  5. While we complete the cutting section, boil water in another vessel by adding a little salt to it.
  6. Once we notice the water boiling, put sliced pieces into it and cook till they turn soft. It hardly takes a minute or two as water is boiled.
  7. Tip: When we try to break one piece, it breaks with the pressure of two fingers.
  8. Drain all water and put these pieces in chilled water (the process of shunting) and then place them over a clean cloth and dry for 10 minutes.
  9. Once dried, put them in a mixing bowl and sprinkle a thin layer of corn flour (or else flour turns into lumps). Gently mix pieces so that the flour gets coated with a thin layer.
  10. Heat oil in a pan on low flame and let the temperature reach 130 degrees Celsius. Put potato pieces in oil and fry for 60-90 seconds till they reach mild golden brown colour and remove from oil.
  11. In the first instance of deep fry, potatoes get cooked from outside and give mild colour.
  12. Repeat this process for the remaining pieces; now increase the flame to attain 180 degrees Celsius.
  13. Put first fried pieces and deep fry till you get crispy and golden colour.
  14. Transfer the french fries recipe to a kitchen towel so that excess oil gets absorbed.
  15. At this stage, we can sprinkle little salt and paprika and serve hot with tomato ketchup.

2.  Put slices in salted water and keep aside. Once we finish cutting, clean the slices in water and put them in another bowl of fresh water.
