Onion Salad

Onion Salad

 

Onion salad is one of the simple recipes which can be prepared at home. It is best served with chapati and biryani recipes. If you want to enhance tomato onion salad recipe you can add even cucumber slices.

 

Ingredients:

 

Onion Salad RecipeOnions – 8 no.

Lemon juice – 8 tsp.

Salt – required

Red chilli powder – required

Coriander leaves – 1 cup

Tomatoes – 2 no.



Method:

 

  • Slice onions in a thin circular shape. Add salt and keep aside for 5 minutes.
  • Then wash onions and remove water
  • Now again add little salt, red chilli powder, lemon juice, tomato slices and coriander leaves and serve.
  • Onion salad goes well with chapati or biryani

Pear and Mango Chutney

Pear and Mango Chutney

 

Pear and Mango Chutney is a delicious summer recipe. You can taste unusual flavour of mangoes and pear at a time. Also it is healthy and nutritious chutney recipe.

 

Ingredients:

 

Pear and Mango ChutneyRaw mangoes – 250 gms.

Pears – 250 gms.

Almonds – 8 no. (chopped)

Cashew – 8 no.

Raisins – 1 tsp.

Red chilli powder – 1 tsp.

Clove powder – ¼ tsp. (2 cloves)

Sugar – 500 gms.

Garam masala – 1 tsp.

Salt – 2 tsp.

Marsh melon seeds – 1 tsp.

Water – 500 ml.


Method:

 

  • Remove the skin and mash mangoes and pears.
  • Heat 1 tbsp. of sugar on a saucepan until it turns brown.

 

Tip: Cook sugar on low flame and stir continuously.

 

  • Add 500 ml of water, once it is fully dissolved add remaining sugar.
  • Once it reaches to boiling state, add mashed fruit, chilli, salt, cashew and raisin seeds.
  • Stir continuously until you get jam type thick consistency.
  • Add garam masala and clove powder.
  • Remove from flame and let it cool.
  • Pear and Mango chutney is ready, transfer to a clean and airtight container so that it can be preserved for 1 month.

Beerakaya Pachadi

 Beerakaya Pachadi

 

Beerakaya Pachadi is a green and high fiber recipe which can be consumed directly with hot rice or with breakfast recipes. Many of us throw away the skin of rigid gourd but it can be turned out as a delicious recipe.


Ingredients:

 

Beerakaya PachadiBeerakaya peel – 2 cups

Garlic – 2 cloves

Coriander powder – a pinch

Red chilli powder – 1/2 tsp.

Turmeric powder – A pinch

Salt – As per your taste

Curry leaves – 2 tsp.

Oil – 1 tsp.

Cumin seeds and mustard seeds – 1/2 tsp.

 

Method:

 

  • Add two cups of water and boil beerakaya peel by adding little salt
  • Drain water and keep aside.
  • Fry few slightly mashed garlic cloves, cumin seeds and mustard seeds.
  •  Add boiled beerakaya peel and fry for a while
  • Add coriander powder, red chilli powder, turmeric powder and salt and cook for a while

 

Tip: Don’t try to overcook the peel, it may degrade perfect taste.

 

  • Beerakaya pachadi tastes great with hot rice.
  • Garnish with coriander leaves.

Ridge Gourd Raita

Ridge Gourd Raita

 

Ridge gourd raita is one of the simple and easy to make recipe. Beerakaya raita is famous in south India. Among ridge gourd recipes, this is different variation. Make your dining table nutritious with this special turai recipe.


Ingredients:

 

Ridge Gourd – 1 (small)

Churned Yogurt/ thick buttermilk – 1 1/2 cups

Green chillies – 2 pc.

Turmeric powder – A pinch

Salt – As per your taste

Coriander leaves – 1/2 cups

Mustard seeds, cumin seeds, black gram, red chilli, asafoetida, curry leaves for poppu – required (2 tsp.)

Oil – required

Garlic cloves – 2

 

Method:

 

  • Wash and peel ridge gourd. Cut into small pieces and keep aside.
  • Heat oil in a frying pan by adding popu ingredients – mustard seeds, garlic cloves, red chilly pieces, black gram, cumin seeds, curry leaves and asafoetida.
  • Once the above ingredients are fried, add ridge gourd pieces and cover with the lid.
  • Sprinkle turmeric powder and little salt and remove from the flame. Let it cool.
  • Add this ingredient with churned yogurt/ thick butter milk.
  • Garnish with coriander leaves.
  • Ridge gourd raita goes well with rice as well as paratha.

Ridge gourd salad

 

Ridge gourd salad is one of the best raw diet recipes, people who are serious in losing their weight and maintain their sugar levels constant should try this Vegetable Salad, eating raw vegetables is always considered as a best practice. Doctors and dieticians prescribe always prescribe their patients to have at least one kind of Healthy Salads during a day.


Ingredients:

 

Fresh ridge gourd – 4 no.Ridge gourd salad

Pepper powder – required

Salt – required

Lemon Juice – required

 

Method:

 

  • Choose fresh (small in size) ridge gourd and peel the outer skin.
  • Cut them into thin circular pieces

 

Tip: Check the taste of the vegetable some of them may be sour and spoil ridge gourd salad recipe.

 

  • Now arrange these cut pieces on a plate and sprinkle pepper powder, salt and lemon juice and serve.

Green Chutney

Coriander Chutney

 

Green Chutney is one of the simplest and low ingredient consuming Chutney Recipes. It can also be treated as multipurpose low calorie recipe. It is normally added in preparation of liquid of Bhel puri, or can be consumed for munching of samosa, kachori or any starters. It can also be consumed for making of sandwich which is not only colorful but also healthy.


Ingredients:

 

Green coriander leaves – 1 cupGreen Chutney

Mint leaves – ¼ cup

Ginger – 1/4 inch

Green chilies – 2no.

Lemon juice – 2 tbsp.

Salt to taste

 

Method:

 

  • Pluck the coriander and mint leaves and clean them.
  • Coriander Chutney tastes good if the leafs are fresh, you can add even its stem if you feel they are tender
  • Add leaves, green chilies and ginger to the mixer.
  • Grind all the above ingredients to smooth paste, if you feel the paste is thick you can even add little water to dilute.
  • At last add 2 tablespoon of lemon juice and salt as per your taste and mix well.
  • It goes well with samosa or kachori

 

Tip: You can substitute black salt with ordinary salt, little (1/4 tsp.) sugar to get different taste.

Eggplant salad

Eggplant salad

 

 

Eggplant salad also called as Brinjal salad when made with fenugreek seeds makes it one of the healthy salad recipes. Eggplant recipes are low in calories and contain good levels of micro nutrients.

 

Ingredients:

 

Brinjal/ Eggplant – ½ kgEggplant salad

Garlic cloves – 2

Green mirchi – 4

Salt – As per your taste

Vinegar – ½ tsp.

Fenugreek seed powder (fried) – ½ tsp.

Coriander leaves – 1 tsp.


Method:

 

  • First clean the brinjals and cut down to small size
  • Apply salt and marinate for ten minutes
  • Put the frying pan and add little oil and fry until it gets soft
  • On other hand grind garlic and chilly into paste.
  • Again add one tea spoon oil to the vessel and fry garlic and chilli paste.
  • Add vinegar and Fenugreek powder and mix well
  • Add this paste to brinjals so that the mixture is applied evenly
  • Now put in the refrigerator and serve along your meals.
  • Garnish with coriander leaves and serve hot.
