Badam ka seera

Badam ka seera is one of the traditional Diwali Sweets recipes, this almond recipe is served usually during the Hindu festival “Diwali”. Badam ka Seera is made of almonds, milk, sugar and ghee.

From our childhood, Diwali festival means cracking fireworks and eating sweets. If there is no sweet prepared then the festival is not fulfilled. Whichever house you visit you will find at least one variety of sweet. Among all Diwali Sweets, I used to like Badam ka seera as its soft and melting.

Many say eating almonds along with its skin is good for health, at the same time some people don’t like its skin. In our case, I have removed its skin. It’s a good idea to soak almonds for at least 5-6 hours. Health experts say that eating almonds by soaking them gives its full nutritional benefits.

Here are some tips to help you make the perfect badam ka seera:

  1. Soak the almonds: Soak the almonds in hot water for about 15-20 minutes, then remove the skin. This will make it easier to blend them into a smooth paste.
  2. Use the right amount of water: When blending the almonds, use just enough water to make a smooth paste. Too much water can make the paste runny and affect the texture of the seera.
  3. Roast the almond paste well: Roasting the almond paste in ghee on low heat for about 10-15 minutes is important to enhance its flavor and aroma. Stir continuously to prevent it from sticking to the bottom of the pan.
  4. Add the sugar in small quantities: Add the sugar in small quantities, stirring continuously to avoid lumps. Gradually increase the amount of sugar to get the desired sweetness.
  5. Add milk in small quantities: Add the milk in small quantities, stirring continuously to avoid lumps. Gradually increase the amount of milk to get the desired consistency.
  6. Add cardamom powder and saffron: Add a pinch of cardamom powder and saffron to the seera to enhance its flavor and aroma.
  7. Cook on low heat: Cook the seera on low heat, stirring continuously until it thickens and leaves the sides of the pan. This will help prevent the seera from burning and sticking to the bottom of the pan.

Ingredients

  • Almonds soaked overnight – 1 1/2 cup
  • Milk hot – 3 cups
  • Ghee – 250 gm
  • Sugar – 1/2 to 1/3 cup

Instructions

How to Make Badam Ka Seera:

  1. Peel the almonds, and grind to fine paste.
  2. Heat ghee in a heavy pan and add the paste
  3. Cook on first high flame and then slim flame, stirring continuously until the paste turns light brown
  4. You will notice an aromatic smell coming out of the fry then carefully pour hot milk and stir.

Tip: Since the mixture tends to splatter, it is recommended to use a long spatula.

  1. When the mixture thickens, add the sugar and cook on a slow flame
  2. Stir continuously until ghee begins to separate.
  3. Badam Ka Seera is ready. Decorate with chopped nuts and serve hot.
