Dosakaya Egg Curry

Yellow cucumber or sambar cucumber is used to prepare curries, raitas and even pickles. It is one of the staple Andhra vegetables which is used as the main ingredient in our daily cooking.

I agree this is a variant of cucumber family which is mostly available in South India, but one can cultivate at your home by sowing its seeds.

Apart from making Dosakaya Egg curry, we can even make use of this veggie in combination with chicken and prawns. By adding moong dal we can make a dry version or add this veggie in toor dal to make dal version.

Ingredients

  • 3 tbsp. Oil
  • ½ tbsp. Mustard seeds
  • ¾ tbsp. Cumin seeds
  • 1 cup Onions
  • 5 No. Green chillies
  • 2 tbsp. Ginger garlic paste
  • 2 tbsp. Curry leaves
  • 250 Gms. Dosakaya/ sambar cucumber 1 medium-size
  • ½ tbsp. Turmeric powder
  • 1 tbsp. Salt
  • 1 cup Tomato
  • ½ tbsp. Red chilli powder
  • ½ glass Water
  • 2 No. Boiled Eggs
  • ½ tbsp. Coriander powder

Instructions

  1. Add oil, once it reaches optimum heat add mustard seeds and cumin seeds.
  2. Drop sliced onion pieces and slit green chillies until onions turn translucent.
  3. Make a space in the middle of onions and add ginger garlic paste and sauté for a while.
  4. Add curry leaves and slit dosakaya and mix well.
  5. Sprinkle salt and turmeric powder and cook for 5 minutes.
  6. Add tomatoes and cook further till tomatoes are cooked.
  7. Sprinkle red chilli powder and add water.
  8. Add eggs and cook further for a minute so that eggs absorb the blend of spices.
  9. At the end of the recipe, sprinkle little coriander powder and mix well.

How to make Dosakaya Egg Curry Andhra Style:

  • Drop little oil in a pan and let it heat for a second.

  • Add mustard seeds and cumin seeds and fry on low flame till mustard seeds splutter.

  • Slice Onions into medium-sized pieces and add them.

  • Slit green chillies into two half’s and sauté for a while till onion turns tender.

  • Add ginger-garlic paste and sauté till its raw flavour is cooked.

  • Put a few strands of curry leaves to add flavour.

  • Cut Dosakaya into small pieces and add it to the above mix.

Tip: Check the taste of the Cucumber sometimes they may be sour.

Tip: Try not to use ripe vegetable, always tender tastes good.

  • Sprinkle turmeric powder and salt and mix all ingredients.

  • Cover the pan with a lid and cook for 5 minutes till sambar cucumber turns soft.

  • Slice Tomatoes into small pieces and add them.

  • Sprinkle red chilli powder and mix all ingredients.

  • Add half glass water and dilute the mixture to get gravy.

  • Boil eggs separately, remove the shell and pierce with a fork or with a knife.

Tip: Piercing egg will help in absorbing spices.

  • Close the vessel with a lid and cook for a minute or two so that eggs absorb spices.

  • Sprinkle coriander powder at the end and cook for a second.
