 Date Rolls

 

Date Rolls are one of the fast and easy desserts. As it is wrapped with loads of healthy dry fruits, it’s the best healthy dessertsever we can provide for our children. Indians believe that whenever there is a sweetest moment or any happiest moment we need to celebrate with sweet. As we all know that Indian sweets are best of their kind.

Ingredients:

 

Dates (deseeded) – 1 kg.Date Rolls

Condensed Milk – 1 tin

Dry Coconut – ½ cup

Mixed dry fruits (pista, almonds/badam, cashew or whatever available) – 250 gms.

Ghee – 50 gms.

Butter paper sheet

 

Method:

 

  • Break/ cut dates coarsely into small pieces
  • Heat nonstick pan on low flame and add milkmaid (condensed milk), pista, almonds, cashew (all available dry fruits).

 

Note: Stir continuously and don’t let the mixture stick to the bottom.

 

  • Stir continuously until you get soft lump.
  • Until the lump is cooled, take butter paper sheet and spread coconut powder.
  • Once it is cooled, grease your hands with ghee and take small lump into your hand and roll into your required shape.(circular or cylindrical shape)
  • Apply coconut powder to date rolls and cover all over.
  • Chill them and serve.

 

Tip: If you want square shape then you can put whole lump in a square shape tray covered with butter paper and chill it. When you are ready to serve, just cut them into your required shape.

Kalakand

Kalakand (Milk Burfi)

 

Kalakand or milk burfi is one of the traditional and famous Indian dessert recipes. It is simple to prepare at home. It is so soft that it simply melts in the mouth leaving its flavor and make one to have one more. Because it’s purely made from milk, it’s not just healthy but also more energy giving dessert.

 


Ingredients for kalakand:

 

Milk – 2 litersKalakand

Sugar – 3/4 cup

Almonds and pista for decoration

Silver foil (optional)

Citric acid (dissolved in 1/2 cup water) – ½ tsp

 

Method for the preparation of Kalakand:

 

  • Boil 1 litre of milk in a vessel.
  • When it comes to boiling stage, add citric acid solution (½ tsp. dissolved in ½ cup water)
  • Remove from the heat. Wait till the chenna settles (yogurt like thing gets settle at the bottom of the vessel)
  • Sieve and Squeeze excess water through muslin cloth (if not white cotton cloth).
  • Keep the chenna aside in a separate plate.

 

Note: Do not knead the chenna.

 

  • Put the remaining 1litre milk in a heavy sauce pan and boil till it comes half the quantity.
  • Add the chenna and boil further still it thickens.

 

Note: Make sure bottom doesn’t stick. Stir continuously.

 

  • Add the sugar to thicken the mixture. Stir until the mixture becomes thick soft lump
  • Set in a tray. Kalakand is ready.
  • Apply silver foil (optional) and sprinkle almonds and pista.

Shrikhand

Shrikhand

 

Shrikhand is one of the variety recipes from India which is served along with puries. You find this type of tradition in Maharashtra. Because of its rich golden yogurt color, children love to eat it. We find this Indian dessert during the festive season of Janmashtam, the birth of Lord Krishna.


Ingredients

 

Sugar – 300 gms.shrikhand recipe

Yogurt – 1/2 kg

Cardamom powder 1/2 tsp.

Pista & Almond (crushed) – 1/2 tsp.

Saffron – few strands

 

Method

 

  • Squeeze water out of yogurt and tie it in a clean muslin cloth overnight (around 6-7 hours).
  • Take out the squeezed yogurt into a bowl, add sugar and mix well.
  • Keep aside for 25-30 minutes and allow sugar to dissolve.
  • Crush saffron with hand gently in 1 tablespoon milk and keep aside.
  • Beat the sugar in the yogurt so that sugar gets fully dissolved in yogurt.
  • Pass through a strong strainer which has holes, you can press with hand or spatula.
  • Mix cardamom powder and dissolved saffron and half nuts.
  • Shrikhand is ready. Serve chilled dressed with remaining half nuts

Coconut Burfi

Coconut Burfi

 

Coconut Burfi is one of the famous homemade Indian sweet. Nariyal Ki Barfi is not only easy but also very nutritious recipes. It has many health benefits. It is good for diabetes patients when prepared with sugar fee sweetener.


Ingredients:

 

Coconut (finely grated) – 250 gms.Coconut Burfi

Sugar – 250 gms.

Water – 150 ml.

Cardamom powder

Ghee for greasing plate

 

Method:

 

  • Prepare sugar syrup turning water to 2 1/2 thread consistency
  • Fry the grated coconut with little ghee in heavy saucepan, pour in the syrup.
  • Cook the above mixture stirring continuously until smooth lump is formed.
  • Spread the above smooth lump in a greased plate. Let it Cool.
  • Sprinkle cardamom powder, for good flavour
  • Cut into square shape
  • Coconut Burfi is ready. Store in a dry place or in a airtight container.
