Sometimes people think this is a kind of dessert from looking from outside although there are potatoes. It’s not like you should add only potatoes you can add carrots. This recipe needs hardly few ingredients to cook, and cooking time is also maximum 30 minutes.
As milk is the main ingredient of this recipe, it is bundled with Vitamin A, iron, and Calcium along with saturated fat. If you have any severe gastric problem then you need to consult your doctor before having Vegetable Milk soup recipe. If you want, you can substitute milk with coconut milk but its taste may change.
For people who are health conscious can go with coconut milk, it is low in fat and cholesterol. Also, this substitute gives you instant energy, for vegans you can follow as described but if you want to try non-vegetarian then you can substitute with chicken broth or any other as per your taste.
Ingredients for Vegetable Milk Soup:
Potatoes – 4
Milk – 2 cups
Onions – 1 cup
Pepper powder – 1/2 tsp.
Salt – As per your taste
Water – required
Coriander leaves – 2 tsp.
How to Make Vegetable Milk Soup:
- Peel potatoes and onions. Cut them into four pieces
- Boil potatoes and onions pouring required water.
Tip: We can boil veggies in the pressure cooker and it takes 3-4 minutes to boil.
- Let the mix get cooled and then crush veggies.
Tip: You can crush with a crusher or else you can blend potatoes and carrots (not mentioned, if added any) coarsely.
- Add milk, pepper powder and little salt.
- Mix and boil again for about 10 minutes.
- Vegetable milk soup is ready. Serve hot garnished with coriander leaves.
Tip: If you don’t want clear soup, you can add mash potatoes and onions.
Tip: We can refrigerate veg soup recipe for 3 days but you need to reheat and use it. During freezing this may thicken, you can add vegetable broth or little water as per your consistency and use it.
